Pineapple cake ingredients:

  • 3 cups of flour
  • 2 and 1/2 cups of sugar
  • 200g of butter
  • 1/2 cup of milk
  • 1 teaspoon baking powder
  • 8 eggs
  • 1 can of pineapple slices in syrup
  • 1 cup of pineapple juice
  • sour cherries (optional)
  • For the caramel: 1 cup of sugar and 1/2 of water

1-The first thing we will do is the caramel for the pineapple cake. It's very simple, and you have to follow the steps of this caramel recipe but with the amounts specified in the ingredients section. Once done, distribute it throughout the cake mold and place the pineapple slices in syrup for decoration. If you wish, you can make your pineapple in syrup. To make it even better, you can place red cherries in the centers of the slices. Reserve the mold with the caramel and pineapple for later. Preheat the oven to 180ºC.

2- Now we start with the cake batter. To do this, start by mixing the butter with the sugar until you get a cream. It will be much easier for you to integrate these ingredients if you remove the butter from the refrigerator a few minutes before starting so that it reaches room temperature. Then, separate the whites from the yolks of the eggs.

3- Add the yolks to the butter and sugar mixture and continue beating until incorporated. Beat the egg whites until stiff and set aside in a separate bowl. Add the milk and pineapple juice to the mixture and continue beating. To continue with the pineapple cake dough, gradually add the previously sifted flour with the yeast, stirring constantly. The ideal is to use wheat flour, but if you want to make this cake suitable for coeliacs, you can adapt all the ingredients.

4- Once this is done, it is time to incorporate the egg whites to the point of snow, making enveloping movements so that the cake is more spongy. As an optional ingredient, you can add a teaspoon of vanilla essence. When you have all the ingredients well integrated, pour the batter into the mold, over the caramel and the pineapple slices, and put it in the oven.

5- You must bake the pineapple cake for half an hour at 180ºC and, after this time, reduce the temperature to 150ºC for an hour and a half. Before removing the cake from the oven, check that it is indeed well done on the inside by poking it with a toothpick. Once finished, let it rest for an hour before unmolding and serving. And ready! You already have your pineapple cake made.
