2- Once you have the right figs, extract the tails and wash them very well by placing them under cold tap water, draining them a little, and placing them in a fairly deep pot. Fill the pot with water until it covers all the figs completely and brings it to a boil over medium-high heat.

3- After a few minutes, you will see that the figs have released a kind of white sap, and a foamy layer has formed in the water. At this time, you must remove the pot from the heat, remove that whitish layer with the help of a slotted spoon, drain the figs and reserve them.

4- Now, place another fairly large pot on the fire and add the liter of water, the sugar, and the peel of half a lemon. Using a fork, prick each fig several times (4 or 5) and add them to the pot along with the rest of the ingredients. You should let everything cook over medium-high heat for at least 2 hours so that the figs are well impregnated and the syrup acquires the right consistency.
