  7. 1 minced Serrano chili, no stem or seeds
  8. ¼ teaspoon black pepper
  9. Toast and raw carrot sticks, to serve

  1. Peel the avocados and remove the stones.
  2. Chop the avocado flesh. Add the cilantro, lemon juice, onion, salt and pepper and mix well.
  3. Add half the chili and mix again.
  4. Add more of the chili if necessary.
  5. Cover the guacamole with plastic wrap and chill it until are ready to serve it.
  6. Add the chopped tomato just before serving and mix it in well.
  7. Serve the guacamole with the carrot sticks and toast, for dipping.
