They are cute, round and bite sized. It is simple for your guests to pop one into their mouths for a quick bite. This versatile recipe can be used either way, providing you with a full meal or great tasting appetizers. Tomatoes always seem to be a garden crop you either do not have enough of or you have too many of. On those boom years, this recipe is a wonderful way to use up those surplus tomatoes.

Tuna Stuffed Tomatoes Ingredients

  1. 1 can tuna
  2. Mayonnaise
  3. ½ stalk celery, chopped
  4. Homegrown heirloom tomatoes
  5. Celery salt
  6. Chives, chopped (optional)

Stuffed Tomatoes With Tuna Preparation

  1. Wash the tomatoes and dry them off.
  2. Chill the tomatoes for two hours in the refrigerator.
  3. Mix tuna in a small bowl with the mayonnaise and celery. Use your own discretion as to the amount of mayonnaise; some like more, some like less. Chill in the refrigerator until the tomatoes are ready.
  4. Cut the core out of the tomatoes. Slice each into six wedges, but do not cut them through the bottom. They should open out like a flower.
  5. Sprinkle some celery salt inside each tomato.
  6. Put a large scoop of tuna in the center of each tomato.
  7. Sprinkle chives or capers on top if you wish. Serve on a bed of spring lettuce.

This is a terrific way to use up part of your tomato harvest when you are running out of ideas for them. Heirloom tomatoes offer you lots of different shapes and colors to work with. We have used Caro Rich, a nice round orange tomato, in the photo, but you can use any heirloom you like. If you do not grow your own, try your local farmers' market.
