Avocado Quesadillas with Cheese and Tomato
Is avocado a fruit or a vegetable, you might be wondering. Avocado is actually a fruit and it is delicious in lots of easy party appetizers. There are lots of avocado recipes because avocado is creamy, savory and goes with many other ingredients. These avocado quesadillas combine cheese, red onion, hot sauce, lime juice, avocado, cheese and more for a rich and filling appetizer.
You do not have to use vine-ripened tomatoes in this avocado quesadillas recipe but do use them if you can find them because they are so juicy. Quesadilla recipes are often served as a main course but this tasty recipe makes a wonderful appetizer because the quesadillas are cut into wedges. Serve the quesadillas warm and they will have a mouthwatering aroma. The soft avocado, tasty Mexican cheese, sharp lime juice and other ingredients go together perfectly, making this one appetizer recipe all your guests will want to help themselves to.

Quesadillas with Avocado and Lime

These avocado quesadillas contain a little hot sauce, so you can use Tabasco sauce or another kind of hot sauce. Serve sliced chili peppers on the side, if you want, so anyone who likes their avocado quesadillas extra spicy can help themselves to a little extra heat. Serve the hot sauce on the side too, if you like.

Avocado Quesadilla Ingredients

  1. 4 flour tortillas
  2. 1 ⅓ cups Monterey Jack cheese, grated
  3. 1 ripe California avocado, peeled and diced
  4. ¼ cup sour cream
  5. ½ teaspoon vegetable oil
  6. 2 tomatoes, de-seeded and diced
  7. 1 tablespoon chopped red onion
  8. 2 teaspoons lime juice
  9. 3 tablespoons chopped fresh cilantro
  10. ¼ teaspoon hot sauce
  11. ¼ teaspoon salt
  12. ⅛ teaspoon black pepper
  13. Fresh basil, to garnish
  14. Sliced green chili pepper, to garnish
  15. Sliced red bell pepper, to garnish

Avocado Quesadillas Preparation

  1. Preheat the broiler.
  2. Combine the avocado, tomatoes, lime juice, hot sauce, salt, pepper and onion in one bowl and the cilantro and sour cream in another.
  3. Brush the oil over the tortillas and broil them 4 inches from the heat until they are golden.
  4. Sprinkle the cheese over two of the tortillas and keep broiling them until the cheese melts and bubbles.
  5. Spread the avocado mixture over the melted cheese, and then use the other 2 tortillas to cover them. You will now have 2 avocado quesadillas.
  6. Transfer them to a chopping board and cut each one into 8 wedges.
  7. Serve the quesadillas warm, on a platter decorated with sprigs of fresh basil and sliced peppers.
