Almost everyone loves chicken satay with peanut sauce. You can buy chicken satay, also spelt chicken sate, from the store but making your own is really easy and obviously tastes better too. The chicken skewers are best served warm and you can serve the sauce warm or chilled. Because you are using chicken breast, which is naturally low in fat, you should be careful not to cook it too long. Overcooked chicken tastes really dry. Chicken Satay Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 teaspoon minced ginger
- 2 tablespoons light soy sauce
- 1 tablespoon lime juice
- 1 clove garlic, crushed
- 1 tablespoon brown sugar
Authentic Satay Sauce
- 2 tablespoons creamy peanut butter
- 1 tablespoon light soy sauce
- 1 tablespoon brown sugar
- 2 tablespoons lime juice
- 1 clove garlic, crushed
- 1 tablespoon sesame seeds
- 1 lime, quartered
Preparation
- Cut the chicken breast into 8 strips and put them in a big Ziploc bag.
- Combine all the other ingredients except the satay sauce ingredients, and then add them to the chicken in the Ziploc bag.
- Let the chicken marinate for an hour. Soak 8 bamboo skewers in water for 30 minutes.
- Preheat the broiler or grill, coating the cooking surface with non-stick spray.
- Combine the peanut butter, soy sauce, brown sugar, lime juice, and garlic, adding a little water or milk if it is too thick.
- Thread the marinated chicken on to the skewers and sprinkle the sesame seeds over them.
- Broil or grill the chicken for about 10 minutes, turning it over once.
- Give each person 2 chicken satay skewers and a lime quarter.
