Grilled Beef Fajitas with a Green Yogurt Sauce
You can either use a grill pan, electric grill, or outdoor grill to make this beef fajitas recipe, depending on what you have available. The green yogurt sauce served with this recipe for beef fajitas includes the flavors of yogurt, lime juice, and cilantro and goes very well with the beef.

Grilled Beef Fajitas with Yogurt Sauce

Some beef fajitas recipes are served with tomato salsa but the green yogurt sauce in this one gives it a different flavor. If you have some friends over for a barbecue, why not give this recipe a go, since you can prepare it outside and miss none of the fun! You can make the yogurt sauce in advance if you like and keep it in the refrigerator until you need it.
The beef is marinated in lime juice, thyme, and hot pepper sauce before being grilled, which infuses it with an authentic Mexican flavor and then it is served in the tortillas with onion and bell peppers.

Recipe for Beef Fajitas

Ingredients 
  1. Juice of 2 limes
  2. 1 ½ cups plain yogurt
  3. 1 tablespoon hot pepper sauce
  4. 2 tablespoons extra virgin oil plus ¼ cup more
  5. 1 ½ lbs sirloin or round steak
  6. 2 tablespoons chopped fresh thyme leaves
  7. 2 chopped tomatoes
  8. 8 to 12 large flour tortillas
  9. 1 teaspoon salt
  10. ½ cup loosely packed cilantro
  11. 1 seeded, coarsely chopped jalapeño pepper
  12. 1 large, peeled sweet onion
  13. Salt and pepper to taste
  14. 2 red or green bell peppers, halved and de-seeded

Preparation:
  1. Heat the outdoor grill or an indoor grill pan to high.
  2. Combine the juice of 1 ½ limes, reserving ½ a lime, with 2 tablespoons of the olive oil, chopped thyme and hot pepper sauce.
  3. Coat the beef in this mixture and grill for 6 or 7 minutes per side.
  4. Baste the bell pepper halves with oil and grill them with the beef. Cut across the onion so you get 4 or 5 thick slices.
  5. Baste the onion with oil and grill with the beef and peppers.
  6. Season the beef, peppers and onion with salt and pepper.
  7. The peppers and onions are ready when they are al dente but charred at the edges.
  8. This takes about 10 minutes.
  9. Combine the rest of the lime juice, yogurt, jalapeño pepper, salt and cilantro leaves in a food processor until you have a smooth, green sauce.
  10. Remove the beef and vegetables from the grill when they are done and warm the tortillas.
  11. Slice the cooked beef on an angle, cut the peppers into strips and halve the onion rings.
  12. Pile the beef, pepper strips and onion into the tortillas, top with chopped tomatoes and the yogurt sauce and roll them up.

Serve warm..
