Sandwiches are great finger foods when cut into small slices for easy eating on busy days. Otherwise, just sit back, relax and bite into that satisfying and healthy sandwich which you can very quickly put together for your family for a weekend brunch. One of these delicious sandwiches is California Club Sandwich. It’ll also be great as a tea time snack too. Yet another great lunchbox meal for the kids also.

California club sandwich Ingredients

  1. 8 ounce tub cream cheese
  2. 2 tablespoons honey mustard
  3. 6.5 ounce jar marinated artichoke hearts, drained and chopped
  4. 1/4 cup chopped pitted ripe olives, pitted green olives, or Greek black olives
  5. 16 ounce loaf crusty French bread
  6. 2 cups loosely packed fresh spinach leaves, stems removed
  7. 2 cups sliced fresh mushrooms
  8. 1 small red onion, thinly sliced
  9. 8 ounces thinly sliced cooked turkey breast
  10. 4 slices bacon, crisp-cooked, drained and crumbled (optional; if you want to make this a halal meal then leave the bacon out)
  11. 1/4 cup roasted and salted sunflower seeds

California club sandwich Preparation

  1. In a small bowl, stir together the cream cheese and honey mustard. Gently fold in the artichokes and olives and stir. Set aside.
  2. Cut the bread loaf in half, lengthwise. 
  3. Hollow out the bottom half of the loaf, leaving a 1/2 inch thick shell. 
  4. Tip: reserve the bread crumbs for another use!
  5. Spread the bread shell with 2/3 cup of the cream cheese mixture.
  6. Layer with spinach leaves, sliced mushrooms, red onion and turkey ham into the bottom half loaf of the French bread.
  7. Sprinkle with bacon and sunflower seeds.
  8. Spread another 2/3 cup of the cream cheese mixture onto the cut side of the top half of bread.
  9. Reserve any remaining cream cheese mixture for another use.
  10. Place the top half of the bread, cream cheese mixture side down, on top of the sandwich.
  11. Cut into 4 equal portions to serve.
