Cajun Chicken Quesadilla Ingredients
- 6 oz finely sliced chicken breast
- 6 tablespoons olive oil
- 1 tablespoon Cajun spice mix
- 1 thinly sliced red onion
- 1 thinly sliced red bell pepper
- 8 flour tortillas
- 1 thinly sliced red chili pepper
- 9 oz grated mozzarella
- ¼ cup chopped fresh cilantro leaves
- Tomato salsa, to serve
- Lettuce, corn, and onion salad, to serve
Cajun Quesadilla Preparation
- Combine the chicken with the Cajun spice mix in a bowl until the spice mixture is evenly coating the chicken slices.
- Warm 2 tablespoons of the oil in a skillet over a moderate heat, then add the chicken.
- Fry it for 4 minutes or until it is cooked through, stirring it often.
- Arrange 4 of the tortillas on a baking tray and sprinkle half the cheese over them. Sprinkle the bell pepper, chili, and onion slices over the cheese, then sprinkle over the cilantro.
- Divide the chicken mixture between the tortillas, and then add the rest of the cheese.
- Top with the rest of the tortillas.
- eat another tablespoon of the oil in a skillet over a moderate heat, then add one of the stuffed chicken quesadillas, frying it for a few minutes, until the cheese is melted and the tortilla underneath is golden brown.
- Flip it over carefully and cook the other side for a few minutes.
- Repeat with the remaining tortillas.
- Cut the quesadillas into quarters and serve the wedges with tomato salsa and a lettuce, corn and onion salad.
