  1. 6 oz finely sliced chicken breast
  2. 6 tablespoons olive oil
  3. 1 tablespoon Cajun spice mix
  4. 1 thinly sliced red onion
  5. 1 thinly sliced red bell pepper
  6. 8 flour tortillas
  7. 1 thinly sliced red chili pepper
  8. 9 oz grated mozzarella
  9. ¼ cup chopped fresh cilantro leaves
  10. Tomato salsa, to serve
  11. Lettuce, corn, and onion salad, to serve

Cajun Quesadilla Preparation

  1. Combine the chicken with the Cajun spice mix in a bowl until the spice mixture is evenly coating the chicken slices.
  2. Warm 2 tablespoons of the oil in a skillet over a moderate heat, then add the chicken.
  3. Fry it for 4 minutes or until it is cooked through, stirring it often.
  4. Arrange 4 of the tortillas on a baking tray and sprinkle half the cheese over them. Sprinkle the bell pepper, chili, and onion slices over the cheese, then sprinkle over the cilantro.
  5. Divide the chicken mixture between the tortillas, and then add the rest of the cheese.
  6. Top with the rest of the tortillas.
  7. eat another tablespoon of the oil in a skillet over a moderate heat, then add one of the stuffed chicken quesadillas, frying it for a few minutes, until the cheese is melted and the tortilla underneath is golden brown.
  8. Flip it over carefully and cook the other side for a few minutes.
  9. Repeat with the remaining tortillas.
  10. Cut the quesadillas into quarters and serve the wedges with tomato salsa and a lettuce, corn and onion salad.
