Make a simple and light Spinach Onion salad for lunch if you are watching that waistline. Here’s a lovely and colorful salad that you can easily toss up in 20 minutes to serve about 4 persons. Absolutely easy stuff to make! The spinach salad is essentially a dish with spinach as the main ingredient. Other common additional ingredients are eggs, cheese, tomatoes, slivered nuts, walnuts or crumbled dried berries. Often dressing is applied to the dish. Most chefs use mayonnaise, but some also add vinegar or lime juice to the taste. Salad dressings are as wide-ranging as the ingredients listed.

Spinach Onion Salad Ingredients 

  1. 1/3 cup olive oil
  2. 3 tablespoons rice vinegar
  3. 2 tablespoons snipped fresh tarragon
  4. 1 tablespoon finely chopped shallot
  5. 1/4 teaspoon salt
  6. Dash of black pepper
  7. 8 cups fresh baby spinach
  8. 1 cup cherry tomatoes and/or yellow pear-shape cherry tomatoes, halved or quartered
  9. 1/4 cup thinly sliced red onion
  10. 2 ounces blue cheese, crumbled

Spinach Onion Salad Preparation

  1. For dressing, combine the olive oil, rice vinegar, tarragon, shallot, salt and pepper in a jar.
  2. Cover the jar tightly and shake well.
  3. Arrange the spinach and tomatoes on a platter.
  4. Top it with the red onions and blue cheese.
  5. Drizzle the salad with the dressing.
