Nopales and Shrimp Soup Ingredients
- 1 lb tomatillos, husks removed, rinsed and chopped
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 tablespoons fresh cilantro leaves, minced
- 7 cups chicken broth
- 33 oz pack sliced cactus, packed in water, drained, and rinsed
- 1 cup large shrimp, peeled, tails on
- ½ cup cooked rice
- 2 tablespoons lime juice
- 2 oz feta cheese, crumbled
- Lime wedges to serve
Nopales Soup Preparation
- Heat the oil in a 4-quart pan over a medium heat. Add the onion and cook until golden.
- This will take about 10 or 15 minutes.
- Cook the rice in the meantime and keep it warm.
- Add the tomatillos to the onion and cook for 5 minutes or until soft, stirring often.
- Add the broth and bring it to a boil.
- Stir in the limejuice, shrimp, cactus, rice, and cilantro.
- Cook until everything is hot and the shrimp is pink.
- Ladle the soup into a tureen to serve.
- Serve with crumbled cheese and lime wedges.
