Pozole Verde Receta

Pozole Verde Ingredients -

  1. 1 15 ounce can of hominy
  2. 1 cup hulled pumpkin seeds, raw

  4. 2-4 Serrano peppers, diced finely
  5. ½ pound tomatillos, husked and diced
  6. 3 cups water
  7. 1 cup dry white wine
  8. 2 tsp oregano
  9. 1 tsp thyme
  10. Salt, to taste
  11. ½ lb seitan, chopped
  12. 2 tsp bacon bits (optional)
  13. 1 tbsp olive oil
  14. Radishes, green cabbage, avocado and lime wedges for garnish

Green Pozole Preparation:

  1. Start by sautéing the peppers, tomatillos, onion, seitan, and herbs in olive oil, stirring regularly until the onions are translucent.
  2. Grind the pumpkin seeds in a food processor or coffee grinder, add along with the wine, and simmer for 2-3 minutes until the alcohol evaporates, then add the water, hominy, and salt and simmer for 30 minutes.
  3. Serve with thinly sliced avocados, cabbage, radishes and lime wedges.
