Easy Prawn Recipe

Prawn Appetizer Ingredients -

  1. 10 oz thin noodles
  2. 20 king prawns
  3. 1 tablespoon sun-dried tomato puree
  4. 14 oz can chopped plum tomatoes
  5. 1 tablespoon chopped fresh cilantro
  6. 1 minced clove garlic
  7. 1 tablespoon olive oil
  8. Lettuce, chopped tomatoes, and olives, to serve
  9. Vegetable oil, for deep frying

Prawn Appetizer Preparation:

  1. Cook the noodles, following the instructions on the package, then run them under cold water and drain them.
  2. Toss the noodles with a little vegetable oil.
  3. Fold 6 noodles in half over your fingers and drape them over the edge of a 3 or 4 inch diameter metal sieve so the ends are in the center and the loops are over the edge.
  4. Keep putting more folded noodles around the edge of the sieve, making a woven patter in the center of the sieve, to hold the noodles together and stop the basket from coming apart.
  5. Put another sieve on top of the noodles when you have finished arranging them.
  6. You should have used ¼ of the total noodles (you will make another 3 baskets after cooking the first).
  7. Pour enough oil into a pan to cover the noodle basket and heat it to 375 degrees F.
  8. Submerge the noodle-lined sieves and deep fry until the noodles are golden brown.
  9. Remove the noodle basket and drain it on paper towels.
  10. Make the other 3 noodle baskets in the same way.
  11. Heat the olive oil in a skillet, and then stir in the onions and garlic, stir frying them for a couple of minutes.
  12. Add the cilantro, tomatoes, wine, and tomato puree, simmering the mixture for 6 minutes.
  13. Butterfly the king prawns from head to tail and remove the digestive tracts.
  14. Stir the prawns into the sauce and cook them for a couple of minutes.
  15. Arrange some lettuce, chopped tomatoes and olives in each noodle basket and ladle the king prawn mixture on top.
