Marinated Shrimp Appetizers

Ingredients -

  1. 8 oz can tomato sauce
  2. 3 tablespoons Worcestershire sauce
  3. 1 cup chopped yellow onion
  4. 2 tablespoons canola oil
  5. 2 tablespoons prepared mustard
  6. ½ cup water
  7. 1 green bell pepper, chopped into 1 inch pieces
  8. ½ yellow bell pepper, chopped into 1 inch pieces
  9. 2 tablespoons pineapple juice
  10. ½ teaspoon salt
  11. 1 zucchini, sliced
  12. ½ teaspoon black pepper
  13. 1 red onion, chopped into 1 inch pieces
  14. 1 lb raw shrimp, peeled and de-veined
  15. ¼ cup brown sugar
  16. ¼ cup lemon juice
  17. ½ red bell pepper, chopped into 1 inch pieces

Shrimp cocktail sauce Preparation:

  1. Mix together the tomato sauce, water, yellow onion, lemon juice, brown sugar, canola oil,
  2. Worcestershire sauce, mustard, salt and pepper and bring the mixture to a boil.
  3. Turn down the heat and let it simmer for 15 minutes, uncovered, then stir in the pineapple juice.
  4. Pour half of this mixture into a bowl, then cover and refrigerate it for basting the kabobs while they cook.
  5. Put the rest of the sauce into a big Ziploc bag and add the shrimp.
  6. Seal the bag and turn the shrimp so they are all covered. Chill for 2 hours.
  7. Drain the shrimp and discard the marinade.
  8. Thread the shrimp, zucchini, bell peppers, and red onion on to 8 skewers.
  9. Coat the grill rack with cooking spray, then heat the grill.
  10. Grill the shrimp appetizers over a medium heat for 5 minutes per side or until the shrimp are pink.
  11. Baste the kabobs occasionally with the reserved marinade.
