Homemade Salsa Preparation
- Peel and seed the tomatoes, then char them under the flame of a hot broiler or over a gas grill for a few seconds, turning until the peel starts to blister.
- Remove the peel and the green stem core.
- Chop the tomatoes in half vertically and scoop out the seeds with a spoon.
- Add the garlic to a food processor, then the cilantro, green onions and finally the jalapeños for a few seconds. Switch the food processor off and scrape the sides down with a spatula.
- Add everything else and process with brief pulses.
- Season to taste, chill for an hour, then put a spoonful of salsa in each scoop chip and garnish each one with half a cherry tomato and a cilantro leaf. Serve right away.
