It’s suitable for vegetarians. However, if you are a strict vegetarian who do not consume garlic, by all means skip the garlic in this recipe. This delicious Ricotta and roasted red pepper pasta takes only 25 minutes to make and makes a huge serving of 8. Ricotta and Roasted Red Pepper Pasta Ingredients

  1. 12 ounces dried boy tie pasta
  2. 1/4 cup butter or margarine
  3. 1/2 cup ricotta cheese
  4. 1/4 cup freshly grated Parmesan cheese (1 ounce)
  5. 1 teaspoon minced garlic (2 cloves)
  6. 1/4 teaspoon crushed red pepper
  7. 1/4 teaspoon salt
  8. 3/4 up coarsely chopped fresh basil
  9. 1 7-ounce jar roasted red sweet peppers, drained and chopped (2/3 cup)

Roasted Red Pepper Pasta Preparation

  1. Cook the pasta according to the package instructions and drain well. Return the pasta to a hot pan, cover and keep warm.
  2. Meanwhile, for the sauce, in a small saucepan melt the butter over medium-low heat.
  3. Add the ricotta cheese, Parmesan cheese, garlic, crushed red pepper and salt.
  4. Cook and stir just until it is heated through. Stir in the basil and roasted peppers.
  5. Add the sauce to the warm pasta, toss it until well coated.
  6. Serve immediately.
