
Authentic Thai Chili Sauce Recipe
There is something infinitely satisfying about making your own dipping sauce recipes and if you are serving store-bought prawn crackers or egg rolls, serving a homemade dipping sauce will make up for it! Do not be surprised if your guests beg you for the recipe for this Thai sweet chili sauce because it really is that special.
Sweet Chilli Dipping Sauce
Serve this Thai sweet chili sauce with egg rolls, Chinese dumplings, or prawn crackers and everybody will love it. This chili sauce is excellent with other dishes, such as grilled scallops or potato wedges. The recipe makes three cups but you could serve some and keep some in a jar in the refrigerator for later use if you want. This dipping sauce is moderately spicy. If you want it to be very spicy, leave some of the chili seeds in.
Thai Sweet Chili Sauce Ingredients
- 4 small red cayenne chilies, stems removed
- 10 peeled cloves garlic
- 8 lime leaves
- 3 finely sliced lemongrass stems, top third removed
- 1 cup fresh cilantro
- 1 inch fresh ginger, roughly chopped
- 1 teaspoon galangal, peeled and chopped
- 1 ½ cups white sugar
- 4 tablespoons water
- 3 ½ tablespoons tamari
- 3 ½ tablespoons Asian fish sauce
- 7 tablespoons cider vinegar
Sweet Chili Sauce Preparation
- Puree the chilies, garlic, lime leaves, lemongrass, cilantro, ginger, and galangal in a food processor until it is paste-like.
- Put the sugar and water in a pan over a medium heat, stirring well until the sugar has dissolves.
- Turn up the heat and boil the sugar water for 6 minutes, not stirring but not letting it burn either.
- Stir in the paste, bring the sauce back to a boil, and add the tamari, fish sauce, and cider vinegar.
- Bring the sauce back to a boil and let it simmer for a minute.
- Let it cool before serving.
