Thai Sweet Chili Sauce Ingredients

  1. 4 small red cayenne chilies, stems removed
  2. 10 peeled cloves garlic
  3. 8 lime leaves
  4. 3 finely sliced lemongrass stems, top third removed
  5. 1 cup fresh cilantro
  6. 1 inch fresh ginger, roughly chopped
  7. 1 teaspoon galangal, peeled and chopped
  8. 1 ½ cups white sugar
  9. 4 tablespoons water
  10. 3 ½ tablespoons tamari
  11. 3 ½ tablespoons Asian fish sauce
  12. 7 tablespoons cider vinegar

Sweet Chili Sauce Preparation

  1. Puree the chilies, garlic, lime leaves, lemongrass, cilantro, ginger, and galangal in a food processor until it is paste-like.
  2. Put the sugar and water in a pan over a medium heat, stirring well until the sugar has dissolves.
  3. Turn up the heat and boil the sugar water for 6 minutes, not stirring but not letting it burn either.
  4. Stir in the paste, bring the sauce back to a boil, and add the tamari, fish sauce, and cider vinegar.
  5. Bring the sauce back to a boil and let it simmer for a minute.
  6. Let it cool before serving.
