For the Almond Cookie Balls- 1 ¼ cups flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¾ cup sugar
- ⅓ cup softened butter or margarine
- 1 package softened cream cheese 4 ounce
- 1 egg yolk
- 1 Tablespoon milk
- 2 teaspoons almond flavoring
- 1 teaspoon vanilla flavoring
- 1 package coconut flakes 14 ounce
- 1 package whole almonds 2 once
- ½ cup chocolate chips
- 1 teaspoon vegetable oil
Almond Cookie Preparation
- Prepare 2 large baking sheets of cookie sheets with parchment paper and then set aside until needed.
- Combine the flour, baking powder, and salt on a sheet of parchment paper and then set aside until needed.
- Preheat your oven to 375 degrees Fahrenheit.
- Using a large mixing bowl and an electric mixer, you will add the sugar, softened butter or margarine and softened cream cheese and then beat well for about 2 or 3 minutes. Cream together until fluffy and light.
- Add the egg yolk and beat well. Add the milk, almond flavoring, and vanilla flavoring and beat well on medium high. Reduce to low speed and then slowly add the dry mixture and beat well to combine. Reserve about 1 ¼ cups shredded coconut on a separate sheet of parchment paper until needed. Stir the remaining coconut flakes into the dough. Blend until well combined.
- Shape dough into small bite size balls. Roll the dough balls in the coconut in reserve and then arrange the cookies about 2 inches apart on the prepared baking sheets or cookie sheets. Place in the preheated oven to bake for about 13 to 15 minutes or until cookies are light brown. Transfer to a wire rack and allow the cookies to completely cool.
- To make the chocolate sauce, you will add the chocolate chips and the vegetable oil in a small microwavable bowl. Cook on high for about 1 ½ minutes. Drizzle the chocolate sauce over the almond ball cookies and serve immediately or you can store them in the refrigerator until you are ready to serve.
